Butter
Pork Chops

Mushrooms

Chicken broth
Sour cream
Cajun seasoning

1. Season pork chops. I personally season my chops with salt, pepper, onion powder, garlic powder, seasoning salt and some paprika for some color.
2. Put about 2 tbsp of butter in a large skillet. Once melted cook the chops until brown on each side. So you want to cook the chops until they are almost done. The length of time on each side honestly depends on how thick the chops are. But make sure to not cook them all the way. Once brown, remove chops and set them on a plate.
3. Add onions and mushrooms and cook until onions are translucent and mushrooms are tender. Add garlic and cook for another minute. Make sure to season with a little bit of salt/pepper so you aren’t eating bland mushrooms.
4. Add chicken stock and bring to a boil. If you have thick chops add them back into the skillet and put the lid on. Now cook until chops are completely done.
5. Remove chops one last time. Stir in sour cream and seasoning to taste. I like spicy food so I am a little heavy handed on the cajun seasoning. You can also add some more paprika if you want to add some more color.
6. Add your pork chops back and let them simmer in the sauce for 5 mins. If you have thin pork chops I remember adding them back in now and letting the chops cooked until they are done. If you add them in with the chicken broth then they will over cook and you will have rough pork chops. We want to make sure they are nice and tender.
I love putting this together with mash potatoes and string beans. Also pairs nice with a chardonnay. You can also switch out the chops for chicken if you don’t eat pork. It’s super quick to make during the week and I almost always have all the ingredients already in my fridge. Usually only have to grab some chops from the store. Let me know how your chops turn out!
