Sharing my favorite recipe EVER today! This recipe has evolved so much since I first made it 12 years ago. I started off by combining Bertolli’s Alfredo and Tomato and Basil sauce. One day I picked up the vodka sauce by accident and I’ve been using it ever since. About two years ago I switched from jar Alfredo to just making the sauce from scratch. I love love pasta and probably make it at least twice a week. This recipe is quick and easy which makes it perfect for a week night meal!
Ingredients:
1 medium onion chopped
1 tbsp of minced garlic
3/4 cup chicken broth
1 1/2 cups Heavy whipping cream
1/2 cup of parmesan cheese
3/4 a jar of Vodka sauce
Seasoning
1lb of peeled and deveined shrimp
Penne pasta
Olive oil
Instructions:
- Warm up olive oil or butter in a pan. A tbsp is fine.
- Saute onions until they are almost done. You will know once they start to become translucent.
- Add in chicken broth and bring to a simmer.
- Add in heavy whipping cream. Stir until cream is fully blended.
- Add in parmesan cheese and stir with a whisk until melted.
- Add in vodka sauce. Stir until vodka sauce is fully blended.
- Season to taste. I usually use an Italian blend seasoning, cayenne pepper, red pepper flakes, black pepper and a season all.
- Add shrimp.
Tips/Tricks
- You can use yellow onions or red onions. You can also use half of a yellow onion and half of a red onion.
- Make sure the stove is on a low setting when melting the cheese. If the stove is on a higher setting the cheese will just clump together instead of melting.
- If you want a more creamy taste add more whipping cream and parmesan cheese.
- I prefer to use DeCecco pasta (#41). To me it’s the best tasting box pasta out there. And I love pasta so I have tried them all lol. Also cooks perfectly in 13 mins.
- I also prefer the Bertolli vodka sauce over Classico. The Classico sauce taste a little off for me.
- If you perfect your sauce to be thicker you can use corn starch to do the job.
- Based on the seasoning above I clearly like my pasta spicy! You can use whatever you like. I always say season to your taste.
- Make sure your cook the shrimp on a low temperature as well. Shrimp does not take long to cook and once you over cook shrimp it just doesn’t taste the best.
- Of course you can substitute the shrimp for chicken or another meat. I would suggest cooking any other type of meat first through.
